Kitchen tip: Undo onion overkill

Do you find the taste of raw red onions too strong, particularly in salads and salsas? The simple solution is essentially a quick pickle – slice the onion very finely, pop into a saucer or other shallow dish and squeeze over half a lemon or a tablespoon of vinegar. Leave in the fridge for half an hour or so before using as normal. A nice addition is a little sprinkle of sugar, which gives a lovely sweet/sour edge.
