Top dinner party fare: dauphinoise potatoes

Dauphinoise potatoes are a great dish to serve at a dinner party – simple and easy, delicious and perfect for preparing ahead. However, serving them can be a bit of a dilemma as they tend to go everywhere when you spoon them onto a plate.
The way round it is this – make them the day before, cook them off then weight them down overnight with a tray or dish with a couple of tins in it. The next day, slice the dauphinoise into squares with a knife, carefully lift these out and place on squares of baking paper.
Reheat in a hot oven when you need to serve them; everyone will have a perfect square of potato.
