Go sweet with root vegetable treats

12 OCTOBER 2012

The carrot cake has become a classic staple recipe for any keen baker, but carrots aren't the only root vegetable that can be used to make delectable sweet treats. This autumn, get one of your five-a-day by making your indulgences a little healthier with root vegetables like beetroots, sweet-potatoes, pumpkins or butternut squash.

Odd combinations often result in the most incredible flavours and many chefs are now pushing the barriers between sweet and savoury.

It may sound bizarre, but experimenting with vegetables in pastries, cakes or creamed fillings adds a natural mellow sweetness that complements savoury courses. The naturally moist richness of these vegetables also means that less dairy fats are needed to keep cake soft and fluffy.

Traditionally an American dessert prepared for Thanksgiving, pumpkin pie is a conventional way to incorporate seasonal roots into a perfect pudding.

This classic dish is not only easy to prepare but can easily be adapted to suit the tastes of your own family table. Why not try adding toasted hazelnuts to give your pastry an extra crunch.

For Halloween keep your 'Jack-o'-lantern' for the kids and use beets as the treats, as the vibrant red beetroot adds a delicious moist sweetness to a bitter dark chocolate brownie.

So reach for those roots and whip up one of these sublime sweet creations:

Chocolate beetroot brownies

Children's carrot cake muffins

Sweet potato cake
