Poached chicken with mixed vegetables

Serves: 2 Preparation time: 5 mins Cooking time: 13 mins

Ingredients:

- Chicken breast, organic, skinned and trimmed – 250g/2 medium
- Water – 60ml/4 tbsp
- Butter, unsalted – 10g/2 tsp
- Carrot, sliced – 30g/2 tbsp
- Celery – 30g/2 tbs
- Turnip, baby, sliced – 30g/2 tbsp
- Leeks – 30g/2 tbsp
- Courgettes, sliced – 30g/2 tbsp
- Tarragon – 2g/1 sprig

Method:

Cooking the chicken and vegetables:

Ina medium frying pan on a high heat, bring the water and butter to the boil, season the chicken breasts with salt and freshly ground black pepper and place in the pan with the vegetables, cover with a lid and turn the heat down to a gentle simmer for five minutes. Turn the heat off and leave covered in the pan for another 3 minutes.

Serving:

Check the seasoning and reserve. Remove the chicken to a chopping board; arrange the vegetables on two plates, slice the chicken and place on top.
