Tana's lunch box slices

This flapjack alternative makes a staple for the children’s lunchboxes

Ingredients (Makes 16 slices)
  • 1 tsp sunflower oil for greasing
  • 150g/5oz unsalted butter
  • 3 tbsp golden syrup
  • 75g/3oz demerara sugar
  • 200g/7oz Nestlé Cheerios or Oat Cheerios
  • 25g/1oz sunflower seeds
  • 25g/1oz pumpkin seeds

Preheat the oven to 190°C, 375°F, Gas 5 and grease a shallow 30cm x 25cm baking tray with the oil.

Gently melt the butter, golden syrup and sugar, being careful not to let it brown. Stir into the Cheerios in a bowl, mixing well, then stir in the seeds. Tip the mixture onto the baking tray and press it flat. Bake for 10 minutes or until the mixture has browned slightly at the edges. Cut into slices while still warm and leave to cool on a wire rack.

Tana’s tip: I like to use walnut pieces as well in these – but check first for nut allergies if serving to your kids’ friends.
