French '75

With gin and champagne, this number packs a subtle punch

Ingredients (Serves 1)
  • 25ml/1fl oz gin
  • 25ml/1fl oz freshly squeezed lemon juice
  • A dash of sugar syrup
  • Ice cubes
  • 75ml/3fl oz chilled champagne, plus extra to serve
  • Twirls of lemon zest to decorate

Put the gin, lemon juice and syrup in a cocktail shaker, add the ice cubes and shake well. Pour into a chilled champagne flute, add champagne and top up with more just before serving, decorated with lemon zest.
