Brie and bacon pancake stack

If you like things hot and spicy, scatter a few sliced jalapeño chillies between each layer

Ingredients (Serves 4)

  • 8 rashers back bacon
  • 8 prepared pancakes (see basic pancake batter recipe)
  • 100g/4oz Somerset brie, derinded and sliced
  • 3 tomatoes, halved and sliced
  • Freshly snipped chives to garnish
  • 8 prepared pancakes (see basic pancake batter recipe)

Preheat the oven to 200°C, 400°F, Gas 6. Cook the bacon under a hot grill for about 8 minutes until crisp.

Place a pancake on a lightly oiled baking tray and scatter over one-third of the bacon, brie and tomatoes. Repeat and make 2 more layers, ending with a fourth pancake. Bake for 15 minutes, or until the pancakes are crisp and the cheese melted. Scatter with chives and serve, allowing half a stack per person.
