Fruity granola with rhubarb

Ingredients (Serves 6)

  • 450g/1lb jumbo porridge oats
  • 50g/2oz flaked almonds
  • 75g/3oz mixed seeds
  • 1 tbsp runny honey
  • 200g/7oz dried fruits, such as sultanas, cranberries and chopped figs
  • 400g/14oz rhubarb, cut into 3cm/11⁄4in pieces
  • 2 tbsp caster sugar
  • 3 tbsp water
  • Milk to serve

Method

Preheat the oven to 200°C, 400°F, Gas 6.

Mix together the oats, almonds, mixed seeds and runny honey. Place on a large baking tray and bake in the preheated oven for 10 minutes. Remove from the oven and leave to cool, then mix in the dried fruit.

Meanwhile, place the rhubarb and sugar in a pan with the water and cook for about 6 minutes, until the rhubarb has softened.

Serve a portion of the granola in a bowl with milk or yoghurt, and with a little pot of the rhubarb alongside
