Roasted cod with Castilian potatoes

Ingredients (Serves 4)

  • 700g potatoes , cut into medium sized chunks
  • 3 tbsp olive oil
  • 1 small onion, finely diced (150g)
  • ¼ tsp chilli flakes
  • 1½ tsp paprika
  • 600g frozen cod or haddock fillets, defrosted

Method

Preheat the oven to 200oC, gas mark 6. Boil the potatoes for 5 minutes and drain. Heat 2 tbsp oil in a large frying pan and fry the potatoes for 5-7 minutes over a medium heat.

Add the onions and fry for a further 3 minutes, or until the potatoes are tender. Add the chilli and paprika and cook for 1 minute. Season with a pinch of salt.

Meanwhile, place the fish on a baking tray, drizzle with remaining oil and season, roast for 10 minutes, or until cooked. Serve the potatoes topped with the fish.
