Smoothie Rockets

Adjust quantities to suit the size of your mould. If there is mixture left over, you can add more juice to make a luscious smoothie

INGREDIENTS

Red fruit layer

  • 100g/4oz Carnation Condensed Milk Light
  • 150g/5oz fresh or frozen summer fruits
  • 3 tbsp cranberry juice

Yellow fruit layer

  • 100g/4oz Carnation Condensed Milk Light
  • 150g/5oz frozen or fresh mango and pineapple slices
  • 3 tbsp orange juice

METHOD

Start by making the red smoothie layer. Whizz the ingredients in a small blender until completely smooth. Pour the mixture into a jug and divide it between 6 rocket-shaped ice lolly moulds.

Tap the moulds gently to allow any bubbles in the mixture to rise to the surface and freeze the lollies without the sticks in. When they are solid, remove them from the freezer and use a knife to make a small hole in the centre of each, to hold the point of the lolly stick.

Make the yellow smoothie in the same way as the red and top up the moulds with it. Carefully position the sticks and freeze again until solid. Serve immediately or keep in the freezer for about a week.
