Ingredients (Serves 4)
150g/5oz self-raising flour
1 medium egg
2 tbsp clear honey
150ml/¼pt semi-skimmed milk
25g/1oz sultanas
50g/2oz bran flakes
Oil, for frying
Honey and fresh fruit, to serve
Method
Sift the flour into a large bowl and whisk in the egg. Gradually whisk in the honey, then milk, to form a smooth batter. Stir in the sultanas and bran flakes.
Heat a little oil in a frying pan and add 1 tbsp batter per pancake (how many pancakes you can make in one go will depend on how big your frying pan is). Cook gently for 1-2 minutes, turn over, then cook for a further minute, until golden. Remove from the pan and keep warm while you repeat with the remaining batter to make 8 pancakes in total.
Serve 2 pancakes per person, drizzled with honey and scattered with fresh fruit.
