    Dish type: Desserts Preparation time: 10 minutes Cooking time: 2-3 minutes Serves 4 Ingredients 50g caster sugar Zest and juice of 1 lime 16 Capri strawberries, hulled 1 tsp vanilla essence 2 sprigs of fresh mint 4 wooden skewers Method Place 25g sugar in a small pan with 50ml water, lime zest and juice and bring to the boil, simmer for 4-5 minutes until slightly thickened, add 1 tsp chopped mint.
