50g caster sugar
Zest and juice of 1 lime
16 Capri strawberries, hulled
1 tsp vanilla essence
2 sprigs of fresh mint
4 wooden skewers
Place 25g sugar in a small pan with 50ml water, lime zest and juice and bring to the boil, simmer for 4-5 minutes until slightly thickened, add 1 tsp chopped mint. Allow to cool.
Toss the strawberries in the vanilla essence and coat in the remaining sugar. Thread 4 strawberries onto each skewer and place under a preheated grill for 2-3 minutes until warmed.
Serve with the lime and mint syrup and garnish with torn mint leaves.
