With the festive season in full swing, it's hard to escape foods that are high in carbohydrates and laden with sugar. But for hostesses wanting to keep it light or who are catering for guests looking after their waistline, we have the perfect canapé ideas for all those upcoming parties. They're sure to hit the spot, without tipping the scales.
SMOKED SALMON BLINIS
For the blinis, whisk together eggs, coconut flour, salt and pepper. Stir in shredded and peeled courgettes and blend well, then spoon tablespoons of the batter onto a pan with butter. Flip, and set aside when cooked. Add the blinis to a platter, top with cream cheese and smoked salmon and sprinkle with chopped chives.
ASAPARAGUS WRAPPED IN PROSCUITTO
Wrap a slice of prosciutto around each asparagus spear and place on a lightly-oiled grill. Turn occasionally and cook for 3-4 minutes or until the prosciutto is golden and the asparagus is bright green and tender crisp.
Thread each skewer with 1 olive, 1 cherry tomato, 1 courgette cube, 1 prosciutto-wrapped bell pepper, 1 mushroom, 1 salami cube, 1 olive and 1 tomato; in that order. Pour over a vinaigrette made with oil, lemon juice, vinegar, garlic, oregano, salt and pepper; then grill for about 4-5 mins.
AUBERGINE & RICOTTA ROLLS
This canapé is as simple as grilling aubergine slices with a drizzle of oil, making the mixture using ricotta cheese and oregano (seasoned with salt and pepper), and rolling the aubergine around a dollop of mixture.
KOFTA KEBABS WITH RAITA
Mix together minced meat, chopped onion, chopped jalapeno, spices and seasoning in a bowl and make into mini koftas. Bake for 20 minutes, and while you're waiting, make the raita with yogurt, finely chopped cucumber (with the moisture removed) and mint.
