SMOKED SALMON BLINISFor the blinis, whisk together eggs, coconut flour, salt and pepper. Stir in shredded and peeled courgettes and blend well, then spoon tablespoons of the batter onto a pan with butter. Flip, and set aside when cooked. Add the blinis to a platter, top with cream cheese and smoked salmon and sprinkle with chopped chives.
