Clean Eating Alice brings us a recipe for these delicious vanilla chickpea energy balls!
Clean Eating Alice has brightened our week with these incredible energy balls! Sweet and simple, the chickpeas provide a good source of protein – guaranteed to keep you full during busy days.
Ingredients:
85g blanched almonds
400g tin of chickpeas, drained and rinsed
250g peanut butter
2 tbsp maple syrup
1 tsp vanilla extract
Makes 30
Method:
1. Line a small baking tray with greaseproof paper.
2. Blitz the almonds in a food processor to a flour-like consistency. Add the chickpeas and blitz until fully broken down.
3. Add the peanut butter, maple syrup and vanilla extract and blitz until smooth.
4. Tip the mixture out and, using your hands, roll it into small balls and place on the lined baking tray. Place in the freezer to set for at least 25 minutes. If not eating straight away, store in an airtight container in the fridge.
