Exclusive: GBBO's Selasi reveals how the show changed his life and shares his top tips for Pancake Day!

During his time on the Great British Bake Off, Selasi Gbormittah quickly became a hit with fans thanks to his laidback attitude and witty quips. Since then, the star baker has firmly established himself as a food guru to his legions of social media followers, whether he's sharing photos of his culinary creations or working on exciting new projects. There's no denying that the show has changed his life – and Selasi admits that he still hasn't quite got his head around his newfound fame.

"I have met some really great fans of the show and of baking," he told HELLO! Online exclusively. "It's pretty cool and humbling reading lovely messages from people about how much of an inspiration we are as bakers." Adding that he was "glad to be a part of the experience", Selasi remains humble when it comes to his baking talents. "I blush every time someone tries my recipe and gets it right, considering I freestyle most of the time," he admitted. "I guess they enjoy baking too, eh?"

Selasi has revealed how GBBO changed his life

Listing "travelling and a lot of baking and recipe testing" as his goals over the coming months, Selasi's blossoming empire has already seen him taking on a new series of baking challenges; including creating easy and delicious pancake recipes with Vita Coco just in time for Shrove Tuesday. "I have always loved coconuts and remember back home, my gran had coconut trees in her house and surrounding areas," he reminisced. "So it was a bit of a luxury, having coconut anytime we wanted. So I am very familiar with the product and needed no introduction."

The baker has teamed up with Vita Coco to create delicious pancake recipes

When it comes to pancake toppings, for Selasi there's one that rises above the rest as the ultimate treat. "Banana and chocolate nut spread – this is food heaven to be honest," he revealed. "For a slightly healthy option, I always got for natural yoghurt or cream – keyword, slightly healthy – with mixed berries, lemon curd and Vita Coco Coconut Oil – the coconut adds an amazing taste."

Naturally, we couldn't ask Selasi about pancakes without getting his top tip for perfecting your pancake batter. "Make sure you allow the batter to rest for approximately 20 minutes before baking or frying," he advised. "Also, have a good liquid to dry ingredient ratio!"
