Lemon meringue recipe

The chewy meringue and tangy lemon curd make an irresistible combination

Ingredients (Makes 12)

  • 12 cupcakes, made with lemon extract
  • Dr Oetker vanilla EasyIce
  • 12 tsp lemon curd
  • 12 ready-made mini meringues
  • Julienne strips of lemon zest
  • Icing sugar for dusting

Spread a layer of ready-to-use vanilla EasyIce on the cupcakes, then top each one with a teaspoon of lemon curd and finish with a mini meringue. Sprinkle with lemon zest and dust with icing sugar to serve.
