Ingredients (Makes 12)
- 12 cupcakes, made with lemon extract
- Dr Oetker vanilla EasyIce
- 12 tsp lemon curd
- 12 ready-made mini meringues
- Julienne strips of lemon zest
- Icing sugar for dusting
Spread a layer of ready-to-use vanilla EasyIce on the cupcakes, then top each one with a teaspoon of lemon curd and finish with a mini meringue. Sprinkle with lemon zest and dust with icing sugar to serve.
