Sliced apple cake

Enjoy with a cuppa or serve warm as a dessert. For a change, use pears and cinnamon instead of apples and mixed spice
Ingredients (Serves 6-8)
  • 350g/12oz Bramley apples, peeled, cored and chopped into 1cm/1⁄2in dice
  • 275g/10oz plain flour
  • 1 tbsp baking powder
  • 2 tsp ground mixed spice
  • Pinch of salt
  • 125g/41/2oz soft light brown sugar
  • 2 large eggs, beaten
  • 125g/41/2oz butter or margarine, melted
  • 175ml/6fl oz So Good Fat Free
  • 50g/2oz demerara sugar

Preheat the oven to 190°C, 375°F, Gas 5. Lightly grease and base line an 18cm/7indeep loose-bottomed cake tin.

Sift the flour, baking powder, mixed spice and salt into a mixing bowl. Stir in the sugar. Stir the eggs and butter or margarine into
the So Good Fat Free. Pour into the flour mixture then very briefly stir in. Add the apples and spoon into the tin. Smooth over the top, sprinkle with the demerara sugar, then bake for 50-60 minutes, until the top is golden and the middle of the cake feels springy to the touch. Leave to cool for 20 minutes before removing from the tin.
