Lightly grease and base line an 18cm/7indeep loose-bottomed cake tin. Sift the flour, baking powder, mixed spice and salt into a mixing bowl. Stir in the sugar. Stir the eggs and butter or margarine into the So Good Fat Free. Pour into the flour mixture then very briefly stir in. Add the apples and spoon into the tin. Smooth over the top, sprinkle with the demerara sugar, then bake for 50-60 minutes, until the top is golden and the middle of the cake feels springy to the touch. Leave to cool for 20 minutes before removing from the tin.
