Apple and plum pudding

A hint of aromatic cinnamon works beautifully with the sweet fruits nestling in a light sponge topping
Ingredients (Serves 6-8)
  • 125g/41/2oz margarine, plus extra for greasing
  • 125g/41/2oz caster sugar
  • 2 medium eggs
  • 125g/41/2oz self-raising flour
  • 1 tsp ground cinnamon
  • 175g/6oz fresh plums
  • 2 large apples

Preheat the oven to 190°C, 375°F, Gas 5.

Cream together the margarine and sugar until pale and fluffy. Beat in the eggs, one at a time, then gradually fold in the flour and cinnamon.

Lightly grease an ovenproof dish. Wash the plums then cut each in half and remove the stones. Peel, core and slice the apples. Place all the fruit into the prepared dish and mix together. Pour over the sponge mixture, then transfer the dish to the oven and cook for 40 minutes or until the sponge is golden brown and the fruit tender. Serve while still warm.
