Long iced tea

It’s better to cool the tea at room temperature as it stops it from going cloudy

Ingredients (Makes 1 large jug)
  • 6 Teadirect tea bags
  • 2 level tbsp caster sugar
  • 8 sprigs of fresh mint, plus extra to serve
  • Lots of ice cubes

Put the tea bags in a large tea pot and cover with 1.2ltr/2pt boiling water. Add the sugar and 4 sprigs of the mint and leave to infuse for 15-20 minutes.

When the time is up, remove the tea bags and leave the tea to cool. Once it is cold, remove the mint from the teapot.

Put lots of ice cubes into a glass jug and pour in the cold tea. Add the remaining 4 sprigs of mint to the jug, stir thoroughly and serve poured into tall glasses packed with more ice cubes and topped with a sprig of mint.
