Branflake breakfast pancakes

An interesting new way with bran flakes that takes just 10 minutes to prepare. If you don’t have, or don’t like, sultanas, try using chopped dry apricots instead
Ingredients (Serves 4)
  • 150g/5oz self-raising flour
  • 1 medium egg
  • 2 tbsp clear honey
  • 150ml/¼pt semi-skimmed milk
  • 25g/1oz sultanas
  • 50g/2oz bran flakes
  • Oil, for frying
  • Honey and fresh fruit, to serve


Sift the flour into a large bowl and whisk in the egg. Gradually whisk in the honey, then milk, to form a smooth batter. Stir in the sultanas and bran flakes.

Heat a little oil in a frying pan and add 1 tbsp batter per pancake (how many pancakes you can make in one go will depend on how big your frying pan is). Cook gently for 1-2 minutes, turn over, then cook for a further minute, until golden. Remove from the pan and keep warm while you repeat with the remaining batter to make 8 pancakes in total.

Serve 2 pancakes per person, drizzled with honey and scattered with fresh fruit.
