A summery recipe for runner bean coleslaw
Ingredients (Serves 4)
- 200g runner beans, finely shredded
- ½ small red cabbage, finely shredded
- 1 medium carrot, grated
- 1 banana shallot, finely sliced
- 4tbsp mayonnaise
- 1 tsp Dijon mustard
- Salt and pepper
Method
In a medium to large sized bowl mix together the runner beans, cabbage, carrots, shallot, mayonnaise and Dijon mustard, and then season with salt and pepper.
