February 24, 2014 - 17:28 GMT hellomagazine.com Gluten free smoked salmon and cream cheese pancake recipe for Pancake Day Makes: 12 pancakes Preparation time: 8 minutes Cooking time: 1-2 minutes per pancakeIngredients Mrs Crimble's Pancake Mix 400 ml (3/4 pint) milk 2 eggs A little butter or sunflower oil 200 g (8oz) soft cream cheese 300g (10 ½ oz) smoked salmon, sliced Juice ½ lemon Freshly ground black pepperMethod Make up the pancakes following the instructions on the pack, making sure the pan is nice and hot before adding just enough batter to cover the pan once it spreads out. Remove the pancake from the pan and place a large spoonful of the cream cheese in the centre and spread roughly. Top with some salmon, lemon juice and pepper to taste, then fold over the pancake.
