Prep time: 10 minutes
Cook time: 1-2 minutes per pancake
4tbsp plain flour
200ml Lactofree Semi-Skimmed
1 large free range egg
Sieve the flour into a large bowl and then add a pinch of salt.
Make a small well in the flour and add in the egg.
Stir the mixture with a whisk (or fork).
Then add the Lactofree semi-skimmed and water to make a batter. Add this to the mix a bit at a time whilst beating to avoid lumps in the mixture.
Heat some vegetable oil in a large frying pan and using a ladle, pour a spoonful of the pancake mixture into the hot pan.
Move the mixture around the pan until the base of the pan is covered.
Cook for 1 min before flipping the pancake to cook the other side. You will know the pancake is ready when it is easy to flip!
Serve hot with blueberries and maple syrup or a topping of your choice.
