1 pack of Rankin Selection fruit soda
1/2 jar good-quality strawberry jam
200ml double cream, whipped
50g strawberries, hulled and sliced
Handful fresh mint leaves
Icing sugar, to dust
If your fruit soda is nice and fresh this recipe works perfectly, otherwise toast each slice lightly.
Crush 12 of the raspberries with a fork and mix with the strawberry jam.
Spread each slice of the toasted fruit soda generously with the jam mixture, then spread over the whipped cream.
Arrange on a platter and decorate with the rest of the raspberries, the blackberries and strawberries. Scatter over the mint leaves and give each one a light dusting of icing sugar to serve.
