Start the night with cocktails at the gilded bar that dominated the Great Room at The Cotton House before taking your table in the hotel's Veranda restaurant for knockout Caribbean seafood under the vaulted ceilings. Perched high above the harbour, dinner at the Firefly restaurant is a must – the emphasis is on just-caught seafood and locally grown ingredients.
