Pancake day: Model Emma Louise Connolly’s classic Blueberry Pancake recipe

"Pancake day fills me with childhood memories of a happy, messy kitchen," Emma Louise Connolly tells Hello! Fashion. "Flour everywhere, sticky batter, flipping competitions (no wins from me), lots of Nutella and a full and happy tummy before school. I can’t wait to repeat these traditions with my own daughter one day."

The model and our February 2022 cover girl has almost become as renowned for her cooking skills as for her successful career in front of the camera. A new venture born during lockdown, her account The Greedy Model has amassed an impressive 203K followers. "Having been a model for 15 years, and being very greedy, The Greedy Model was born," she told Hello! Fashion at the time.

Emma shares her classic blueberry pancake recipe

So who better to ask for a Pancake Day recipe on Shrove Tuesday? "The trick to a good pancake is to whisk the dry ingredients (no lumps), rest your batter and a well oiled pan," explains Emma, "Happy flipping!"

Emma Louise Connolly’s Classic Blueberry pancake recipe: 

"A classic - blueberry pancakes. If you don't have buttermilk, use 120ml of milk and 1tbsp of vinegar. Set aside for five mins and use to replace the buttermilk below. These pancakes are so fluffy and soft, made extra delicious with blueberries, a drizzle of syrup and a flurry of icing sugar. Enjoy."

Ingredients:

(Serves 2 "comfortably" according to Emma.)

  • 120g plain flour
  • 30g granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 160ml buttermilk
  • 40ml unsalted butter, melted and more to fry
  • 1 tsp pure vanilla extract
  • 1 large egg
  • Blueberries

Method:

  • Combine the dry ingredients, whisk together to get rid of any lumps & form a well in the centre of the bowl. 
  • Add the wet ingredients into the dry and fold together to form a batter. 
  • Pop the batter in the fridge for 20 minutes or so.
  • Heat the pan over medium heat. Once hot, add a small amount of butter then spoon in the pancakes to fry - bearing in mind the batter spreads as it cooks. 
  • Sprinkle a few blueberries on each pancake. 
  • Once bubbles come to the surface and the edges are set, flip over for a further few minutes. 
  • Serve with yoghurt, syrup and more blueberries.
