Sugar-free apricot and almond truffles

These nutritious little bites are a great healthy snack, nice enough to pop on a pretty plate and serve to friends and family.

Makes approximately 30 balls


1 cup whole, unsalted almonds
2 cups dried apricots
1 teaspoon cinnamon
1 teaspoon pure vanilla extract
2 tablespoons of Steens Manuka Honey
1/2 cup coconut


1. Combine first five ingredients in a food processor and combine until mixture forms a dough like ball.

2. Using your hands, firmly roll into small balls. Roll in coconut.
