Take a leaf out of our summer salads

13 JUNE 2012

Thankfully we've come a long way from the iceberg-loving Eighties, and we now have the widest choice of UK grown leafy salad available to enjoy than ever before.

From peppery rocket and crunchy cos, to iron-filled spinach and the more subtle flavoured little gems, we're sure there's a leaf that will take your fancy.

And what better time to start eating a little lighter than in the run-up to summer?

Food and wine writer and former president of the Guild of Food Writers, Sarah Jane Evans, has commented on the growth in diversity of those healthy greens, saying that leaves are now "at the heart of recipes, as core ingredients, rather than an afterthought."

Convenient bags of fresh leaves makes rustling up a salad a great option for a light lunch or a speedy midweek supper. Plus you'll be well on your way to that all-important five-a-day.

With our creative summer recipes, salad doesn't have to be a boring alternative. Be inspired by our colourful suggestions and get experimenting with those flavoursome leaves.
