A taste of Vietnam... in just 15 minutes

Celebrating the fresh, zesty flavours of Vietnam, we take a look at the country's delicious dishes for a healthy meal that can be on the table in just 15 minutes.

Packed with goodness, bursting with flavour and quick to cook, you can prepare Vietnam's signature spring rolls and famous Pho noodle soup in time for their New Year marking of the arrival of spring on February 10.

With ingredients such as fresh mint and coriander, lime and chilli, these light recipes are both tasty and nutritious.

The classic starter, Vietnamese Spring rolls – made with boiled rice paper – makes for a healthier option to the fried version coming from China.

For a main you can make in minutes, try one of the healthiest and most delicious Vietnamese dishes, pho (pronounced "fuh"). The aromatic, broth-based noodle soup is full of antioxidant-packed spices, and its base being water means it's perfect for warming up on a cold evening.

And cooking Vietnamese-style just got easier. British supermarket chain Waitrose tips Vietnamese food to be one of the hottest at-home food trends in 2013, Nem Viet – a new range of authentic food kits and sauces – means you'll have everything you need at the ready.

"With the country already a popular destination for backpackers, honeymooners and holidaymakers we can only see interest in Vietnam, its culture and cuisine increasing and moving into more British kitchens," says Waitrose Buyer Victoria Mason.
