Fruit gateaux, lemon tart, pavlova, strawberry cake... top summer desserts

05 AUGUST 2013 Whatever the occasion this summer, we have leafed through the baking books to find five of the perfect cake recipes to make your centrepiece a winner.

A fruit gateaux, tart, pavlova and cake all made it into our top choice, featuring summer fruits such as strawberries, blueberries, lemon and more for a delicious burst of flavour...

Strawberry almond pavlova
The great joy of this pudding is that you can make the meringue base days beforehand and store them in an airtight container. You can assemble the pavlova just minutes before serving, so that you feel relaxed and stress-free when bringing them to the table. In order for meringues to be successful they need to be completely dry, light, crisp on the outside and soft on the inside.

Easy peasy lemon and blueberry tart
Short of time but want to make a pud for a Saturday supper or Sunday lunch? This can be quickly put together and left in the fridge until you are ready to serve.
