Recipe: Malibu x Palm Vaults Sunset Colada cocktail

Enjoy a taste of summer with this Malibu Sunset Colada cocktail, created by the team at Hackney's popular Palm Vaults Café.


  • 50ml Malibu Rum
  • 100ml freshly juice pineapple
  • 25ml coconut cream
  • 15ml freshly squeezed lime juice
  • 10ml single cream
  • 1 pinch salt

For Sunset Swirl:

  • Freshly juiced beetroot (hot pink)
  • Freshly juiced carrot (orange)
  • Turmeric (yellow)

Note: You won't taste the flavours of the syrups, they will just add a sunset swirl


  1. Blend all ingredients with a handful of crushed ice
  2. Dip top of glass in lime juice and dip in dessicated coconut
  3. In the glass pour a splash of beetroot syrup and pour 1/3 of colada mixture
  4. Add a splash of carrot syrup and pour 1/3 of mixture
  5. Add a splash of turmeric syrup and pour remaining
  6. This will produce a sunset tie dye swirl
  7. Garnish with a flower and drink with a straw
