Royal fans may be familiar with Claire, who is most famous for designing the Duke and Duchess of Sussex's iconic "non-traditional" elderflower and lemon cake. The stunning bake for Harry and Meghan's nuptials was made from two hundred Amalfi lemons and ten bottles of Sandringham Elderflower Cordial, before being adorned with fresh peonies.

Now, Claire is turning her attention to the Queen's 70th year on the throne. The American baker has designed a jaw-dropping creation to mark the celebration - an epic "Violet Blackcurrent Gateau" that stands at one metre tall.

Designed especially for the celebration and available exclusively to hotel guests at The Standard from 2 - 7 June, the rich dark chocolate cake is spiked with blackcurrant-violet liquor and filled with a compote of English blackcurrants and a violet buttercream, all flavours reported to be the Queen’s favourite.

Claire also uses a secret ingredient to give the filling of her Jubilee cake a floral note. 30g of crushed Parma Violet sweets mixed with mascarpone and double cream.

The monarch, who is "absolutely a chocoholic" according to former royal chef, Darren McGrady, is likely to love this towering chocolate bake. "Anything we put on the menu that had chocolate on, she would pick off the menu," says Darren.
