Anjum, whose TV series Indian Food Made Easy airs on Saturdays at 12pm on BBC2, has created the ultimate age-defying curry with beauty, as well as taste, in mind. The dish, which contains superfoods as well as fresh herbs and spices, is said to boost the complexion, even out skin tone and keep hair shiny and nails strong. The British-born chef, who prefers simple home-style cooking as well as keeping dishes light, fresh and healthy, says: "I am a firm believer in the healing and restorative powers of spices and wanted to create a curry packed with superfoods which can not only have an incredible effect on your skin, hair and nails but will also help you feel your best too. "Superfoods like chia seeds and goji berries contain powerful antioxidants which can not only have an incredible effect on your skin but also leave you feeling energised and bright." Pomegranates are said to enhance collagen production which plumps up the skin, ginger stimulates blood circulation and reduces inflammation, while fresh coriander is known for its detoxifying properties and chillies are rich in antioxidants and flavonoids which help to reduce wrinkles. No curry would be complete without a raita, and Anjum's recipe comes served with one that's filled with Chia seeds, a superfood containing age-defying antioxidants, cumin, containing high levels of vitamin E to keep skin young and glowing, and iron-rich spinach to keep hair thick and strong. As if that didn't sound sufficiently beautifying, a superfood peshwari naan is the perfect side dish to finish off the meal. With Goji berries, a powerful superfood containing beta-carotene to protect skin from sun-damage and almonds, it's full of natural oils that moisturise hair and add shine.
