Whisk the double cream to soft peaks then fold in 3 tbsp of the mango coulis, the lime zest and the sugar. Spoon the remaining mango coulis into the bottom of two Martini glasses, then pipe or spoon the mango cream over the coulis. Chill until ready to serve. Meanwhile, slice the remaining mango and serve alongside the chilled fools.
