This award-winning Superfood Summer Salad recipe by Good4U, aims to inspire people to get healthy and creative with their cooking.

Brimming with natural goodness such as fibre, vitamin C and D, Omega 3 and magnesium, this recipe is easy to make and tastes great.


100g flaked smoked mackerel
50g Good4U Brocco Shoots
2 tbsp Good4U Chilli Seeds
2 large handfuls spinach leaves
50g chargrilled cauliflower
60g baby plum tomatoes halved
1 orange segment
Pomegranate seeds

For the dressing

1 ½ tbsp lemon juice
2 ½ tbsp orange juice
Zest of ½ orange
2 tbsp natural yoghurt
1 ½ tbsp extra virgin olive oil
Pinch of English dried mustard
½ clove of garlic
Sea salt and black pepper to season


1. Put the cauliflower in a large pan of boiling salted water and simmer for 3 minutes. Drain and run under a cold tap to stop it cooking further and leave to dry. Once dry, place in a mixing bowl with a drizzle of olive oil and seasoning, toss well.

2. Heat a ridged griddle pan until it's very hot and grill the cauliflower, turning constantly until nicely charred all over. Transfer the cauliflower and all remaining ingredients to a large bowl and mix well.

3. Finally, drizzle the dressing over the salad and enjoy!
