Exotic mango fool

This deliciously light dessert is stylish enough for a summer dinner party, yet takes just minutes to make

Ingredients (Serves 2)
  • 2 ripe Alphonso mangoes, peeled and one of them chopped
  • 200ml/7fl oz Rubicon Mango juice drink
  • 2 tbsp clear honey
  • Grated zest and juice of 1 lime
  • 300ml/1/2pt double cream
  • 3 tbsp caster sugar
Purée the chopped mango in a blender with the mango juice, honey and lime juice.

Whisk the double cream to soft peaks then fold in 3 tbsp of the mango coulis, the lime zest and the sugar. Spoon the remaining mango coulis into the bottom of two Martini glasses, then pipe or spoon the mango cream over the coulis. Chill until ready to serve.

Meanwhile, slice the remaining mango and serve alongside the chilled fools.
