Roasted vegetables

This makes a great accompaniment to chicken and rice. Vary the vegetables to include the best of what’s in season

Ingredients (Serves 4)
  • 2 packs of ready-to-roast
  • Mediterranean vegetables, or prepare your own chunks of red onion, courgette, peppers aubergine and sweet potato
  • Olive oil for drizzling
  • 1 x 260g jar Nando’s Sundried Tomato & Basil Marinade
  • 2 tsp Nando’s Hot Peri-Peri Sauce

Preheat the oven to 220°C, 425°F, Gas 7.

Place all the vegetables on a roasting tray. Drizzle with the olive oil, turning to coat, then roast in the preheated oven for 15 minutes.

Pour the marinade over the vegetables and return to the oven for 25 minutes, basting regularly. Splash on the Peri- Peri to taste before serving.
