Dish Type: Main Meal
Cooking and preparation time: 30 minutes
2 x 400g tins chickpeas,
Drained 2 teaspoon ground cumin
1 teaspoon ground coriander
2 garlic cloves
Small bunch spring onions or one small red onion
1 teaspoon salt
2 tablespoon plain flour
Olive or vegetable oil, for frying Yamas! Halloumi burger slices
Burger rolls or baps
Hummus, to serve on side
To make the falafel burgers, put the first eight ingredients in a food processor and mix until a smooth consistency is achieved.
Form into six burgers. If they are too runny, add a little more flour.
Cover the bottom of a frying pan with about 1mm of olive or vegetable oil to and heat over a medium high ring.
When hot, add the falafel and cook until golden (approximately 3 minutes each side).
Split the Halloumi burger slices into 4, place each cheese slice on a hot grill pan for approximately 1 minute each side until golden brown.
Place on top of burger along with the rocket and a little pesto.
Serve the hummus on the side.
